The Best Lemon Muffins Ever

Ok, so my next door neighbor is like 80 and she takes care of me like I'm her daughter. Anyway, she made me these wonderful muffins the other day and I fell in love. They were so light and delicious and (as it turns out) healthy!


Lemon Muffins
2 C. Flour
2/3 C Sugar (plus 2 tsp, divided)
1 Tbsp Baking Powder
1/2 C. Unsalted Butter (or margarine) melted
1/2 C. Egg Whites
2 Lemons (or 1/2 C. Lemon Juice and 1+ Tbsp Grated Peel)

In a medium mixing bowl, combine flour, 2/3 C. sugar, and baking powder. In a separate bowl, combine melted butter, egg whites, lemon juice, and peel. Pour liquid mixture over dry and stir just enough to moisten. Spoon into muffin tins sprayed with cooking spray. Sprinkle remaining 2 Tbsps of sugar over the muffins. Bake at 400 degrees for 15 to 18 minutes or until they test done. Makes 12 Muffins

Fat: 7.5g
Sodium: 139mg
Fiber: <1g

if you want to add more fiber, you can sprinkle some milled flax seed over the top with the sugar. Also, if you use margarine instead of butter you will add 20mg of sodium per muffin or 240mg total.

Getting Healthy

So Texas has this weird weight gaining effect (or at least I'm claiming it does!) I gained about 25lbs the first month we moved here. Not sure how...but I did. SO, TJ and I have committed to getting healthy again. We have good weeks and bad weeks, but overall, we are progressing toward a healthier lifestyle. In doing so, I trained for, and ran a half marathon in January. Kara came into town and we ran together.

Kara did awesome! she ran the full marathon and was just a couple minutes away from qualifying for the Boston. I'm so proud of her. She is amazing.

Anyway, I am about 8lbs down and preparing for my next half marathon later this month. TJ visited a new doctor this week and learned that he actually has bone loss from the accident last year and even with knee replacement, will never be allowed to run again. He is limited to biking, swimming, and weight lifting, so losing weight will be much more challenging for him. I'll keep everyone updated as we progress toward our goals.

Explosion!!!

So wednesday was nuts!

my alarm malfunctioned and I woke up late. I let the dogs outside and got dressed for work and gathered my things. I walk outside to let the dogs back in the house and catch them red handed with their noses in the dirt eating something they shouldn't. they now smell terrible. SO i drag them into the house, into the bathroom, into the tub, and wash their mouths out with soap (and the rest of them while i'm at it). After the bath, I grab my things, and am heading toward the door (about 8:40am) when I hear this huge BANG in my attic and then all the walls shook. I thought 'awesome. now my house is on fire.' So I grab the wet pups and head out back to survey the damage from safety. BUT when I get outside, i realize nothing is wrong with my house but there is a huge plume of smoke off in the distance. So I run in the house, grab my camera, and start filming. (sorry about the bad filmage. It may make you nauseous)Turns out is was a chemical plant near by. But the police had us on lock down for a couple of hours until the 20 mi/hr winds dissipated all the smoke southward.


Looking back, its funny to see what you do in drastic situations such as these. I've always thought, 'if my house was on fire, I would at least grab a photo album,' but I didn't. Its good to know that my instincts are to get to safety. I am incredibly grateful it wasn't our home. We don't own a lot of things of value, but thinking about it, we would have lost a lot of precious memories.

home, sweet, home

We bought a house!!!
Its in Seabrook, Tx :) We are about 15min from work, 5 min from the boardwalk, and 2secs from a running trail that works through town.

The house got an inch of water in it during Ike and so the lady that lived there before used her whole insurance settlement to redo the house! Everything has been updated! Its wonderful to not have to worry investing money in the house. Anyway, we put an electric fence for the dogs, so they can roam the yard and wrestle to their hearts content. We are still working on de-catting the place, but with the dogs roaming the place, they shouldn't be a problem for long. If anyone has any ideas about plants and things for the front, its kinda barren, we'd love some ideas!















We would like to thank everyone who helped us through the house buying process. It was a lot crazier than we expected and we are really grateful for the support (physically, financially, and emotionally). We are very happy and excited to be homeowners!!

Work and Things

So, as many of you know, I graduated in May (yay!). TJ and I moved to Houston, Tx to work on the new space suits for the astronauts at a company called oceaneering.
Working here is really fun. And the summer was really fun. We went to the beach every week. the dogs think they own Galveston. We haven't had a chance to go to Schlitterbaun yet, but they are open year-round, so maybe we'll take a beach day in January when TJ comes back.











After the summer ended, TJ headed back to Boise for his last semester of school and I stayed here in Houston to bring home the bacon. Hopefully TJ will get his old job back when he returns in January, but we'll just have to wait and see :)
